Turkey Chili
Turkey Chili Makes 6 to 8 servings
2 teaspoons olive oil 2 pounds lean ground turkey 1 cup chopped onion 2 cloves garlic, chopped 1 28- ounce can diced tomatoes 1 16- ounce can small red beans 1/2 cup diced red bell pepper 1/2 cup diced green bell pepper 1 tablespoon chopped Jalapeño pepper 2 teaspoons chili powder 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/8 teaspoon black pepper
1. In roasting pan heat olive oil over medium heat. Add turkey, onion, and garlic. Cook until tukey is nice a brown. Drain fat.
2. Add undrained tomatoes, red beans, bell pepper, jalapeño, chili powder, cumin,salt and pepper. Stir to combine. Bring to a simmer, reduce heat. Cover and simmer for 25 to 30 minutes or until flavors are blended.
3. If desired serve chili over cornbread. Top with cheddar cheese, sour cream, and scallion.
