Thai Salad from Cafe Bernardo
2 pounds cooked capellini noodles
1 Cup of thinly sliced carrots
1 Cup thinly sliced cucumbers
1/8 Cup of scallions
1 ½ Cup spicy peanut dressing
Spicy Peanut Dressing
1/8 Cup chopped garlic
2 oz. of peeled and chopped ginger
1 ¼ Cup organic smooth peanut butter
1 ¼ Cup soy sauce
¾ Cup of sugar
¾ Cup rice wine vinegar
2 Cup peanut oil
1/8 Cup sesame oil
½ bunch of chopped cilantro (stems removed)
1/8 Cup chile paste
Place all dressing ingredients in a bowl and blend with a submersion blender or blend ingredients in a blender. Set aside.
In a large bowl, place all the salad ingredients together. Add 1 ½ Cups of dressing to the mixture. Gently toss until all ingredients are well coated. Place salad on a large serving tray. Garnish with fresh roasted peanuts, and some thinly sliced purple cabbage. Enjoy!
