Cheffery's Thai Chicken Salad Recipe

Chicken:

1 Chicken Breast
Salt and Pepper to Taste
1/2 Teaspoon Thai Seasoning
1 Tablespoon Soy Sauce
¼ Teaspoon Sesame Oil
1 Teaspoon Red Wine
A pinch of Ginger Minced
A Pinch of Garlic Minced
Vegetable Oil

  1. For Marinade combine all ingredients thoroughly and add the chicken breast, let marinade at least 4 hours.
  2. Then Grill until done.
  3. Then cut into small strips and place around the top of the salad.
Salad:

1 ½ Cups Spring Mix
1 Teaspoon Chopped Cilantro
Shredded Carrots
Sliced Cucumbers
Bell Peppers
Black Sesame Seeds
Daikon Sprouts
Rice Noodles (Fried)
Thai Dressing (Recipe Follows)

Thai Dressing:

½ Cup Toasted Sesame Oil
¼ Cup Rice Wine Vinegar
Salt (To Taste)
Sesame Seeds
Pinch of Fresh Ginger Minced
Thai Spices

  1. Whisk all ingredients together until combined.
  2. Toss with spring mix, cilantro, carrots, cucumbers and peppers.
  3. Place chicken in a circle around the top of the salad.
  4. Top with rice noodles and daikon sprouts and sprinkle with black sesame seeds.
