Grilled Spice Rubbed Flank Steak
Ingredients-
3 lb. flank steak, trimmed of excess fat and connective tissue
2 Tbs. chili powder
1 Tbs. paprika
1 Tbs. brown sugar
2 tsp. ground cumin
1 tsp. ground coriander
1 tsp. garlic granules or garlic powder
One-half tsp. each sea salt and black pepper
3 Tbs. olive oil
Sea salt to taste
Corn tortillas
Fire roasted salsa
Instructions-
1. In a small bowl, combine all ingredients except olive oil and mix well. Brush olive oil on the outside of the meat and sprinkle spice rub all over the meat. You can marinate meat for one hour or as long as overnight.
2. Preheat grill to high heat. Allow meat to come to room temperature for 30 minutes. Season generously with salt and grill for 4-5 minutes on first side and then turn over and grill for 4-5 minutes to attain a medium-rare or medium doneness (125oF internal temperature for Medium Rare & 130oF for Medium.). Allow meat to rest 5-6 minutes before slicing. Slice against the grain one-quarter inch thick and serve with grilled tomato salsa and warmed tortillas.
