Spring Greens with "Made In Nature" Dried Apricots

And Mangos, Pecans & Goat Cheese

In honor of Earth Day, "Made In Nature" is offering up this earth-friendly salad using all-natural, organic dried fruits.

INGREDIENTS:

1 tablespoon Dijon style mustard 
1 ½ tablespoons balsamic vinegar 
3 tablespoons extra virgin olive oil 
¼ cup fresh cilantro leaves 
¼ cup pecans 
¼ cup "Made in Nature" dried apricots cut into strips 
¼ cup "Made in Nature" dried mangos 
½ cup grape tomatoes cut into ¼'s 
6 ounces spring greens 
1 head frisee lettuce torn in small pieces 
1 - 4 ounce piece of goat cheese

DIRECTIONS:

  1. In a large bowl whisk together mustard and vinegar.
  2. Add oil in a slow stream, whisking until emulsified.
  3. Whisk in cilantro, salt and pepper to taste.
  4. Add spring greens, frisee, "Made in Nature" dried apricots & mangos to vinaigrette and toss to coat well.
  5. Divide greens among 4 plates and top with cheese and pecans.
  6. Makes 4 servings.


Note: Don't be afraid to add some grilled chicken breast or cooked turkey if desired
