Moorish Spiced Ahi Tuna
Moorish Spiced Ahi Salad
1 serving
Ahi Dry Rub
1 tsp. White sesame seeds
1 tsp. Black sesame seeds
½ tsp. Granulated garlic
¾ tsp. Red pepper flake
½ tsp Dark chili powder
¼ tsp. Cumin
½ tsp. Salt
1 Tbl. Paprika
Spice blend can be made ahead of time. It will hold for about a month.
Salad
4 oz. Mixed baby greens (about 1 handful)
6 Edamame soy beans, shelled
1 oz Mandarin oranges
¼ oz Sliced Almonds
Keep separate until ready to assemble.
Obadiah's fun salad
1 oz cucumber, seeded, thinly sliced
1 oz Red onion, thinly sliced
1 oz Roma tomato, outside meat only, thinly sliced
1 oz Rice wine vinegar
½ oz Aji-Mirin cooking wine
1 tsp. Agave nectar
½ tsp Salt
Combine all. Set aside. Salad can be prepared a day in advance.
4oz fresh Ahi tuna
2 tsp. vegetable oil
Technique
Apply spice rub to all sides of the ahi liberally. Place sauté pan on stove to med-high heat. Add about two teaspoons of vegetable oil to pan. Sear ahi about 25-30 seconds on each side. Set aside.
In a large bowl combine lettuce, soy beans, oranges, almonds and the fun salad with liquid. Toss. Place on plate. Slice ahi in thin strips and place around greens.
