SPAM Carpaccio
SPAM carpaccio, hazelnuts, stone fruit &arugula salad
1 can SPAM
1 pound cherries, pitted and halved
2 ea peaches, medium dice
1 tsp shallots, minced
1 tsp parsley, minced
1/4 cup micro arugula
champagne vinegar
olive oil
toasted hazelnuts, for garnish
Vella Mezzo Secco cheese, for garnish
-Thinly slice SPAM and shingle several slices on plate
-Toss remaining ingredients with a small amount of oil and vinegar
-Season with salt & pepper and place on top of SPAM
-Garnish with toasted hazelnuts & cheese
A nice little summer salad on shaved SPAM. Delicious.
