Tres Agaves Sopa de Ranchera

  Tres Agaves Sopa de Ranchera

1 whole chicken
2 quarts chicken stock
2 whole corn
5 jalapenos
1 bunch of cilantro
1 onion
2 cloves of garlic
4 ea tomatoes
2tbl kosher salt

In a sauce pot, Sautee the garlic, chicken and tomatoes for four minutes at high heat. Add the chicken stock and the rest of the ingredients. Cook at medium heat for 30 minutes, skim the fat every five minutes to finish with a clear rich flavor. To finish the soup, serve it with fresh tortillas, green cabbage and a wedge of lime.
