Shrimp Po Boy With Cajun Dust And Cajun Sauce

Laisser les bons temps rouler!...That's 'Let the good times roll!' for you non-Cajuns. Here's a recipe for Shrimp Po Boys and Cajun Dust from Louisiana Sue that is sure to get the good times rolling.

Shrimp Po Boy
8-10 medium shrimp, peeled and divined per sandwich
batter *I like to use a blend of flour and corm meal
or you can purchase Louisiana Fish Fry
light up the flavors with Cajun Dust (seasoning)
you can buy some or make your own and control
not only the salt but the spicy heat
Cajun Dust Recipe
(cajun seasoning good on everything except ice cream)
5 tablespoons sweet paprika
2 tablespoons ground black pepper
2 tablespoons onion powder
2 tablespoons ground cayenne pepper
2 tablespoons dried oregano
2 tablespoons dried thyme
1/4 cup sea salt
1/4 cup garlic powder
Combine all ingredients in a small bowl and blend well.
Store in an airtight container in a cool dry place for up to 3 months.
Miss Leona's (from Catering To You) Cajun Sauce
1 cup Best Foods Mayonnaise
1/2 cup ketchup
1 tablespoon fresh squeezed lemon juicjuicen>
1 tablespoon Cajun Dust or similar spice mix
1/2 teaspoon Tabasco or Louisiana hot sauce
*add more or less to turn the heat up or down
Combine mayonnaise, ketchup and lemon juice in a small bowl
whisk until blended. Add Cajun dust and Tabasco to taste.
Store in airtight container and keep refrigerated up to 4 days.
Good on seafood, meats and cold cuts..............
