Scallop Ceviche

 

1 cup bay scallops- cleaned & dried

1/2 cup lemon juice

1/2 cup lime juice

1/2 cup kosher salt

1 each lemon zest

1 each lime zest

1 each Grape fruit zest & fruit in segments

1 pinch of basil

1 pinch of cilantro

1/2 cucumber – diced or sliced

3 to 5 cherry tomatoes – cut in half
