Spicy Organic Sausage & Pasta w/ Dried Mangos

It's Earth Day so let's use natural, organic ingredients... like dried fruit from "Made in Nature"! Chef Steven Shipley shares this pasta recipe.

INGREDIENTS:

1 - 16 ounce package of Gemelli pasta
Salt to taste for the pasta water
2 tablespoons pure olive oil
1 medium red bell pepper cut into thin strips
1 bunch green onions cut into slices (bottoms only, reserve the tops for a garnish)
1 cup of organic low-sodium chicken broth
½ cup "Made in Nature" mangos
½ pound organic sausage, cooked and cut into slices
2 tablespoons fresh basil leaves, torn
1 tablespoon butter
½ cup grated parmesan cheese
Garnish with additional mango strips and green onion tops

DIRECTIONS: 

  1. In saucepot, prepare Gemelli pasta as label directs, using 1 tablespoon of salt water
  2. While the pasta is cooking, heat olive oil in a large skillet over medium-high heat and add the red bell peppers and green onion bottoms.
  3. Sauté for two minutes.
  4. Add the chicken broth, the "Made in Nature" mangos and bring to a boil.
  5. Cook for two minutes then add the sausage.
  6. Remove from the heat.
  7. Drain Gemelli pasta, reserving 1/2 cup pasta cooking water, and add pasta to the large sauté pan with the other ingredients.
  8. Bring back to a boil and gently toss or stir to incorporate.
  9. Remove from the heat and add the torn basil, butter and parmesan cheese.
  10. Thin with reserved pasta water if needed.
  11. Garnish with additional "Made in Nature" mango strips and green onion tops.

Makes 4 servings.

Note: Serve with your favorite salad, try substituting cooked chicken for the sausage, or try this recipe with "Made in Nature" dried apricots or dried pineapple
