Salsa Vasca

Salsa Vasca

1 cup slivered garlic
1 cup Extra Virgin Olive Oil
2 T paprika
2 T sherry vinegar
kosher salt
fresh pepper

Slowly simmer garlic in oil.  Add paprika and simmer another 10 minutes.  Add remaining items and season.

This is a versatile sauce and goes great with meat, poultry and fish.  (On the show, it was served over heirloom tomatoes, sliced melon and prosciutto.)
