Salmon Tartlets

Salmon Tartlets

1 pound cooked salmon
12 phyllo cups
Two-thirds cup mayonnaise
One-half cup finely diced celery
One-quarter cup finely diced sweet red onion
Diced red peppers
1 tablespoon lemon zest
Dill
Capers

Instructions-
1. Combine salmon with mayonnaise, peppers, celery and onion.  Zest lemon into mixture and mix well.
2. Fill cups with mixture.  Garnish with dill and capers

Another Option-
Press mixture in mold or cup.  Turn out on Bibb lettuce and salad vegetables for a nice salad.  Or turn onto endive or crostini as a first course appetizer.
