Grilled Salmon With Ginger-Soy Glaze

Paragary's Executive Chef Kurt Spataro shared this recipe for Grilled Salmon with Ginger-Soy Glaze.  The new Paragary's in Stockton opens tomorrow.

INGREDIENTS:

4 salmon filets
¼ cup soy glaze (recipe follows)
½ English cucumber
Vegetable oil for grilling
1 Tbsp seasoned rice vinegar
Salt and pepper  

Brush salmon with oil and season lightly with salt and pepper. Grill the salmon filets over a charcoal or wood fire until medium-rare to medium. Brush one side of the fish before removing from the grill. While the fish is grilling, thinly slice the cucumber using a Japanese mandolin or sharp knife. Dress the cucumber with the vinegar and place arrange a little on each of four serving plates. Place the cooked salmon over the cucumber and serve.

Ginger-soy glaze Ingredients:

1 cup soy sauce
1 cup sugar
¼ cup sake
¼ cup mirin
2 Tbsp sherry
1 Tbsp Worcestershire
1 Tbsp ginger, minced
2 tsp garlic, minced
½ tsp cracked black pepper
Corn starch as needed

Combine all ingredients except ginger and garlic and bring to a boil. Reduce heat to a simmer and cook 10 minutes. Make slurry with the cornstarch. Slowly add little by little while whisking the sauce. Thicken the sauce to the consistency of maple syrup. Cool the sauce, then add the ginger and garlic.
