Bay Gourmet Salad Stacks
Bay Gourmet Stacks (also a signature salad menu item at the market)
Ingredients-
1 cup Broccoli Crunch
1 cup Limoncllo Seafood Salad
1 large tomato approx 3 inches in diameter, sliced
1 cup of spring greens
1 cup of baby spinach
1 avocado peeled and cubed
1 half English cucumber sliced
Champagne Vinaigrette
2 - 3 inch diameter cylinders (could be PVC pipe or can)
Instructions-
1. Place cylinder on serving plate with hard even surface
2. In this order, stack inside cylinder:
One-half cup of spring greens
One-half English cucumber sliced
Avocado cubes
1 slice of tomato
One-half cup Limoncllo Seafood Salad
One-half cup Broccoli Crunch
Baby spinach
3. Gently press stack through cylinder removing cylinder from top
4. Drizzle stack with dressing. Garnish with olives and capers
Serves 2
