RED, WHITE & BLUE PARFAITS FOR INDEPENDENCE DAY
ALMOND CRISP TOPPING EAST BAY RESTAURANT SUPPLY

INGEDIENTS:
8 OUNCES OF UNSALTED BUTTER CUBED INTO 1/2 INCH PIECES, CHILLED
3/4 CUP + 2 TABLESPOONS OF SUGAR
½ TEASPOON OF FINE SEA SALT
1-3/4 CUPS UNBLEACHED ALL PURPOSE FLOUR
1 CUP OF REGULAR OATS (NOT INSTANT)
3/4 CUP BLANCHED ALMONDS, TOASTED OR OTHER TOASTED NUTS
1 TEASPOON OF VANILLA EXTRACT
1 TEASPOON OF CINNAMON
PUT ALL THE DRY INGREDIENTS IN THE BOWL OF A FOOD PROCESSOR. BLEND UNTIL IT RESEMBLES CORNMEAL. ADD BUTTER TO DRY INGREDIENTS. PULSE UNTIL IT RESEMBLES CORNMEAL WITH A FEW LUMPS. ADD VANILLA AND PULSE UNTIL DOUGH FORMS LARGE CLUMPS. PREHEAT OVEN TO 325 DEGREES. SPRINKLE CRISP TOPPING EVENLY ON A LARGE UNGREASED BAKING SHEET. BAKE UNTIL GOLDEN BROWN ABOUT 20-25 MINUTES. COOL & CRUMBLE INTO PIECES. STORE LEFTOVERS IN AN AIRTIGHT CONTAINER.
STRAWBERRY, CHERRY, BLUEBERRY OR RASPBERRY COMPOTE INGREDIENTS:
4 CUPS OF CLEANED FRUIT
2/3 CUP OF SUGAR
JUICE OF ½ OF AN ORANGE
2 TABLESPOONS OF GRAND MARNIER, COINTREAU OR BRANDY
1 TEASPOON OF VANILLA BEAN PASTE OR VANILLA EXTRACT
HEAT 4 CUPS OF FRUIT IN A NON-REACTIVE SAUTE PAN WITH THE SUGAR AND ORANGE JUICE. COOK FOR 2 MINUTES. ADD THE LIQUER. COOK FOR 2-3 MORE
MINUTES UNTIL JUICES THICKEN TO SYRUP. REMOVE FROM HEAT AND
STIR IN VANILLA. SERVE WARM OR CHILLED. REFRIGERATE LEFTOVERS IN AN AIRTIGHT CONTAINER. USE LEFTOVERS ON PANCAKES, WAFFLES OR CREPES.
