Posole For Your Soul
2 pounds Pork steak or roast, cut into small cubes
1 quart Water, or more
1 TBSP Salt
2 Garlic Cloves, minced
1 large Onion, chopped
4 TBSP Chile Powder
1 TBSP Oregano
1 TBSP Cumin
2 Cans Hominy
2 Cans Diced Tomatoes
For Serving: Chopped Cilantro, Green Onion, Lime Wedges, Shredded Cheddar, or Sour Cream, or all of the above.
Combine Pork, seasonings, water, onion and garlic in a large stock pot. Bring to a simmer and cook for 3 hours until pork is tender and falls apart. Add hominy and tomatoes and cook and additional ½ hour to combine flavors. Serve in bowls with toppings of your choice and your favorite Convergence Vineyards Red Wine.
