Seared Pork Tenderloin over Stone Fruit Salad
Seared Pork Tenderloin over a stone fruit salad.
Ingredients:
1 Pork tenderloin
1-2 Stone Fruit
Mixed greens
1/4 Cup apple cider vinegar
3/4 cup olive oil
1/2 blue cheeze
1/4 cup carmalized onions
3-4 basil leaves
Salt, Pepper
Sear pork tenderloin in oil on heated pan. Season with salt and pepper.
Mix Apple cider vinegar, olive oil, basil, honey, Dijon mustard and whisk together.
Add salt and pepper to taste. Chiffonade basil leaves and toss in the vinaigrette.
Saute stone fruit in pan after pork is removed to use juices. Pour vinaigrette over stone fruit and place pork on top.
