Peking Duck Tostada
Ingredients-
12 Hong Kong Chips
2 cups of shredded Peking duck meat (cooked)
1 Papaya diced
12 sprigs of cilantro
Tbl diced red onion
3 pieces of pickled jalapeño
One-half lime
Pinch of salt
2 oz. sweet chili sauce
One-half cup broken cashew nuts
Cooking Instructions-
-Combine the diced papaya, chopped cilantro, red onion and chopped pickled jalapeño together with a squeeze of lime. Add a pinch of salt to taste. Set aside
-In a bowl, take shredded duck and mix with sweet chili sauce until coated.
-Place Hong Kong chips on a decorative tray. Top the center with your duck mixture. Spoon the Thai salsa on top. Sprinkle with cashew nuts, top with a sprig of cilantro and serve.
