Ingredients:

8" deep dish pie shell
1 egg

Topping Ingredients:
1/2 cup brown sugar
1/2 cup flour
1/4 cup butter

Pie Filling:
4 cups canned, sliced pears, well drained
2 Tbsp sugar
3 Tbsp corn starch
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp lemon juice
1/8 tsp salt


Set oven to 375 degrees. Prick the pie shell all over with a fork to prevent bubbles. Wisk the egg in a small bowl and brush the pie shell lightly with egg mixture. Discard remaining egg mixture. Bake the pie shell untill golden brown, about 8-10 minutes. Remove from oven and let cool.

To make the topping, blend the butter, brown sugar and flour together well with a fork. Using your hands to finish the blending helps incorporate ingredients. Put mixture in the refrigerator until needed.

Mix the pears (be sure they are very well drained), sugar, corn starch, nutmeg, cinnamon, lemon juice and salt together. Pour into the cooled pie shell. Place pie on a cookie sheet to catch any spills as you spoon the topping over the pears, making sure it is well distributed over the pears.

Bake pie for 12-14 minutes or until the topping is well browned. Let cool completely before cutting or the pie will be runny. The pie can be rewarmed for serving. Pies freeze well. You can also make this a crisp by not using a pie shell at all.
