Summer Penne Pasta
Ingredients-
1 box dry penne pasta
2 buncehs fresh basil
One-half cup olive oil
10 cloves garlic
One-half cup grated parmesan cheese
1 cup cherry tomatoes cut into halves
1 cup yellow corn cut off the cobb
Instructions-
1. Remove the leaves from the stems of the fresh basil. In a blender or food processor, combine basil leaves, garlic, parmesan cheese and olive oil. Blend together for approximately 25 seconds.
2. In a saute pan, lightly saute corn until tender. Add cooked pasta and then basil. Top off with cherry tomatoes and parmesan cheese
Note: This recipe serves 4 persons and can be enjoyed hot or cold.
