Pasta With Grilled Summer Vegetables
Ingredients-
1 lb. of your favorite pasta, preferably short (like penne, farfalle, etc.
3-4 cups assorted leftover grilled vegetables, chopped into large pieces
1 clove chopped garlic
2-3 Tlbs. chopped fresh herbs-basil, oregano, parsley
Your favorite brand of Extra Virgin Olive Oil, to taste
Salt and Pepper
1 cup grated parmesan cheese
Instructions-
1. Cook pasta in salted water according to directions
2. Heat oil in saute pan, toss in garlic. When garlic sizzles, toss in vegetables just to heat through
3. When pasta is ready, strain it. While hot, put in large pasta bowl. Add vegetables, chopped herbs, Extra Virgin Olive Oil, salt and pepper.
4. Toss together. Top with cheese. Perfection!
Serve four persons.
