New Orleans Muffaletta
Ingredients
Ham, salami, provolone or mozzarella cheese,
Italian or French bread, olive topping
Olive topping
1 Cup green olives stuffed with pimento, coarsely chopped
1 Cup black olives, coarsely chopped
1 Cup chopped celery
1/2 Cup onions, chopped
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
3 oz. Light olive oil or Light Italian dressing
Take bread cut and start building your Muff
lightly spread some of the olive oil or dressing on bread
then add layer of cheese, ham and salami, you can repeat if you
want a really big sandwich. Add a generous helping of the
olive topping, place top of bread on your Muff. You can serve
heated ( to melt cheese) or cold
Makes a super and unique sandwich.
Leona's Southern Peach Cobbler
A big favorite at Rio Ramaza
Ingredients
filling
8 Cups peaches, fresh or frozen, sliced
1 Cup sugar, granulated
1 Tablespoon ground cinnamon
topping
1-1/2 Cup flour
1 Cup sugar, granulated
1 teaspoon salt
1-1/2 teaspoon baking powder
2/3 Cup butter, small pieces, chilled
1 Egg, slightly beaten
Heat over 375 degrees
In large baking pan place peaches, then sugar and cinnamon for filling
In food processor or mixing bowl add flour, sugar, salt and baking powder
(food processor pulse 5 times) mix thoroughly in bowl then add butter
and egg mix again until dough crumbles but does not ball up and stick
together. Sprinkle over the fruit mixture, covering all exposed fruit.
Bake for 35-40 minutes until golden brown
Remove from oven and cool.
Can be served warm with vanilla ice cream
