1/4 loaf Pugliese, crust removed and torn into pieces
2/3 cups buttermilk
1 lbs ground beef
1 lbs ground veal
1 lbs ground pork
1/2 cups grated parmesan
1 egg yolks
2tbsp chopped Italian parsley
1 bunch of thyme, leaves removed and chopped
1 tbsp salt
1 tsp ground black pepper
Combine the bread and buttermilk in a bowl. Let sit for about 10 minutes, mashing with a fork, until a smooth paste forms.
Place the ground meats, cheese, parsley, thyme, yolk, garlic, salt and pepper in bowl. And add buttermilk/bread mixture. Combine until evenly mixed. Taste for seasoning. Form into balls.
