Chicken and Vegetable Lumpia
CHICKEN & VEGETABLE LUMPIA
Ingredients:
Boiled and deboned chicken (save the chicken water)
Shredded carrots
Cut cabbage
Diced celery
Diced string beans
Bean Sprouts
Pufina Fish Sauce
Menlo wrappers
1 Egg, beaten
Directions:
Boil and debone chicken.
Remove the chicken and use the chicken water to boil the vegetables.
Shred the chicken.
Drain vegetables.
Mix vegetables and chicken.
Add fish sauce to taste.
Put all ingredients in a large colander and place a tray underneath.
Put a dollop of the mixture in the middle of a Lumpia square and roll TIGHTLY:
1. Fold the 1st flap over
2. Roll the Lumpia square
3. Fold the sides in toward the end of the roll
4. Seal the final roll and edges with a small amount of egg
Fry rolled lumpia in HOT oil until brown and crispy.
To Freeze:
Freeze rolled lumpia before cooking. Let lumpia thaw completely before frying. Do not fry frozen lumpia.
Note:
Lumpia is fun to roll as a group or family. Put the colander in the middle of the table and roll away while you visit with your loved ones.
