Dawson's Lobster en Croute
(A Popular Restaurant Favorite)
Ingredients-
8 oz Lobster meat
2 oz Trumpet Mushrooms
.5 oz diced Turnips
.5 oz diced Rutabega
.5 oz diced carrots
1 oz cut Fingerling potato
1 oz fresh peas (frozen works fine)
8 oz Lobster sauce (clam veloute with Lobster glace and sherry added to finish)
Puff pastry cut into circle to fit bowl used
Instructions-
1. Medium dice vegetables and blanch. Set aside.
2. Cut and blanch potatoes. Set aside.
3. Trim down mushroom to bite sized pieces.
4. Clean lobster meat from shell, cutting into fairly large pieces.
5. Heat sauté pan over medium high heat, add a small amount of olive oil and add all vegetables except the peas. Saute for a couple of minutes without adding color.
6. Add lobster meat and cook two minutes longer. Add sauce to pan and fresh peas, simmer on stove top or place in oven for approximately 4 minutes. You do not want to overcook the lobster as it will become rubbery in texture.
7. Place in bowl and top with baked pastry round.
Enjoy! Makes for a festive holiday meal!
