Irish Soda Bread

This bread is very popular in Ireland because it is easy to make and is often baked fresh for tea. It was made with sour milk so if milk went sour it was a way not to waste anything.
Ingredients:
4 cups plain flour
1 tsp salt
1 tsp baking soda
2 cups buttermilk or sour milk
2 cups raisins (optional)
Sieve the dry ingredients into a large bowl. If adding raisins do so now.
Add buttermilk/sour milk.
Work quickly and knead the dough lightly.
Form into a round loaf and cut a cross in the top with a floured knife.
Place in a pre-heated oven (425ºF for 40 to 45 minutes)
When baked, the loaf will sound hallow on bottom.
Wrap immediately in a clean towel to stop the crust from hardening too much.
Enjoy with Irish Kerry gold butter or your favorite jam.
