Bledsoe Ham Sandwich on Jalapeno Cheese Bread

Bledsoe Ham Sandwich on Jalepeno Cheese Bread with Mustard, Poached Plum Jam and Grilled Frisee

Poaching Stonefruit

Poaching liquid:

5 Cups of Sugar
4 cups of water
Two pieces of Cinnamon Stick
2-4 pieces of Star Anise
1 3"knob of fresh ginger, cut in half

2 lbs. of fruit, preferably just barely ripe

Additional things you can add:
Lemon Zest, orange zest, vanilla bean, red wine, white wine, dessert wine

Bring the sugar and water to a boil until the sugar is dissolved and the liquid is clear.
Turn down the heat so the syrup is simmering and add the aromatics, allow them to simmer in the syrup so their flavor can infuse the syrup.

Cut the fruit in half and pull out the pit. If the fruit is a freestone, pulling out the pit will be easy. If it is a cling (which means the pit will stick in there, you will probably have to use a knife to cut around the pit to dislodge it.)

Keep the syrup simmering, and gently drop the fruit into the syrup.

(Note: poaching fruit is a learned process, but fortunately very easy to learn. The more ripe the fruit, the shorter time you'll need to poach. Ideally your fruit isn't too ripe, because you'd like the fruit to sit in the poaching liquid and absorb some flavor. After poaching, you want the fruit to be soft and give way, but not so soft it completely dissolves.

After you drop the fruit into the poaching liquid, let it steep about five minutes. The first thing you will notice is that the skin will drop off. Skin adds color to the syrup and to the flavor, so let it stay in the syrup. Scoop the fruit up with a serrated spoon and poke it with a knife or fork. Is it soft? Or does it resist? If it is very hard, it's not done yet.

Poached Fruit can be used for a fruit sauce to accompany meat-Pork loves fruit salsa, beef, or chicken. Also, it can be used to chop and put on a sandwich, which is included here....
