Gougeres
Ingredients-
250ml water (1 cup)
113g butter (4 oz.)
140g gruyere cheese (5 oz.)
140g flour (5 oz.)
Salt
Sugar
5 eggs
Additions:
Cloves and pepper, coarsely ground
Fines herbs
Bacon and onions, very finely minced
Instructions-
1. Bring water, salt, sugar, and butter to a boil. Add flour all at once until a dough forms. Stir over low to moderate heat for two minutes until dough dries slightly.
2. Transfer dough to the bowl of a 5qt mixer and add eggs one at a time on low to medium speed. Allow the dough to reform each time before adding the next egg.
3. Mix in cheese. Add any additions.
4. Fill piping bags. Pipe into rounds approximately the size of a ping pong ball. After piping, use a wet finger to smooth down any tips. Gougeres will expand slightly when baking.
5. Bake at 375 in convection oven for 17 minutes.
