Spanakopita - Sacramento Greek Festival Recipe

The folks at the Sacramento Greek Festival are sharing their wonderful recipe for Spanakopita (Spinach Rolls).  If you don't want to cook them for yourself, head to the festival this weekend.

Spanakopita Ingredients

1 Large onion, chopped
1 Bunch green onions, chopped
1/2 Pound butter
1 Tbs fresh dill, chopped
2 Tbs fresh parsley, chopped
1 Tbs fresh mint, chopped
1 Package frozen chopped spinach (3lb)
1/2 tsp Black Pepper
11/2 Pounds Feta cheese
1/2 Cup grated Parmesan Cheese
5 Eggs
1 Pound Phillo Dough
1 Pound Cottage Cheese

Defrost spinach and squeeze thoroughly to remove all liquid. In large skillet melt 1/4 cup butter and sauté onions. Add dill, parsley, and mint. Add spinach, pinch of salt and sauté 5 minutes. Remove from heat and cool. Beat eggs, add to cool spinach mixture. Then add crumbled Feta, Parmesan and Cottage cheese.

Take a sheet of Phillo dough, butter topside. Take 2Tbs of the spinach mixture and place at bottom of the sheet. Roll over once, tuck in sides, and continue to roll. Brush finished roll with butter, twice.

Pre-heat oven to 350 degrees and bake for 30 minutes. For appetizer size rolls, use, 1/2 sheet of Phillo dough and 1Tbs of spinach mixture.

(May be frozen, layered between sheets of wax paper. Thaw and bake as above.)
