Cool Soba Noodles with Mirin-Sesame Sauce

1 cup dashi
3 Tbs. tamari
1 Tbs. sugar
2 Tbs. mirin
1 tsp. grated fresh ginger
2 tsp. sesame oil
Sea salt to taste
Wasabi to taste
4 green onions, cut into paper thin slices
1 small cucumber, peeled, seeded & thinly sliced
Optional- sprinkle gomasio on noodles for added flavors
Cooking Instructions
1. Boil soba noodles according to directions on package or to desired doneness. Drain and rinse well with cold water. Drain well, cover with damp towel and chill completely in fridge.
2. In a small sauce pan, combine the dashi, tamari, sugar, mirin and ginger and bring to a low simmer and cook for 3 minutes. Add in ginger and sesame oil and remove from heat. Season with salt to taste. Chill completely before serving.
3. Portion noodles into 4 noodles bowls and garnish with green onions and cucumber slices. Divide dipping sauce into four sauce bowl. Serve wasabi and gomasio (optional) on the side for guest to add to noodles as needed.
