A mixture of creamy cheeses wrapped around assorted fruit finished with a variety of coatings--toasted pine nuts, fresh herbs and candied fruit.
Ingredients:
6 large red seedless grapes
6 large green seedless grapes
5 small figs
6 dates
6 small pieces of candies ginger
8 oz. Philadelphia Cream Cheese room temperature
8 oz. Creamy Gorgonzola or your favorite Bleu Cheese room temperature
One-half cup toasted chopped pecans
One-half cup dried cranberries
One-third cup mixed herbs of fresh dill and pink peppercorns
One-half cup toasted pine nuts
One-half cup toasted almonds
Directions:
In separate bowls, set aside ginger, pecans, cranberries, herbs, pine nuts and almonds.
With a wooden spoon or spatula, mix together creamy gorgonzola or bleu cheese and cream cheese until well blended.
Divide cheese mixture and roll into half inch balls using the palms of your hands. Flatten each ball until large enough to cover selected fruit.
One at a time, wrap cheese around a piece of fruit until even.
Finish by rolling each ball in your selected topping.
Display on a garnished plate and serve with your favorite cocktail.
