Steamed Artichoke Scampi Style
With Shrimp, Wild Mushrooms, Tomatoes And Pesto
Ingredients:
6 Raw Shrimp (peeled and devained)
6 Baby Artichokes
1 lemon
One-quarter cup Wild Mushrooms cleaned and chopped
2 Tomatoes (preferably a vine ripened)
1 tbl Pesto
1 tsp Minced Garlic
One-third cup White Wine
One-quarter cup cream
1 tbl butter
Salt and Pepper to taste
Cooking/Preparation Instructions:1. Bring water to a boil; add a pinch of salt and a whole lemon cut in half. Add artichokes and bring back to boil then simmer. Cook for approximately 15 to 18 minutes until tender. Remove from pot and immediately shock in ice cold water.
2. Peel outer leaves of artichoke until you see the heart. Once peeled, slice in half and set aside in bowl.
3. Take tomatoes and dice into quarters. Set aside.
4. Take butter and cube. Set aside.
5. In a medium sauté pan on medium heat, add oil and a little bit of butter. Add minced garlic and shrimp. Cook through. Once shrimp is cooked, add baby artichokes, wild mushrooms and tomatoes. Sautee together.
6. Add white wine and deglaze. Reduce. Add cream and reduce until cream is a thick consistency. Remove from heat and finish with adding room temperature cubed butter.
7. Optional add a squeeze of lemon for flavor.
Serve on plate with equal amounts on each. Drizzle remaining sauce from pan if any.
