Chocolate Strawberry Mousse Cake

Yield: four 4 inch cakes
Crust:
2 1/2 cups graham cracker crumbs
¼ cup melted butter
1 egg
¼ cup cocoa powder
4 spring form pans
Mix all ingredients together and press firmly onto the bottom of the pans, bake at 350 for 10 minutes
Mousse:
1 quart plus 1 cup heavy cream
1 lbs. dark chocolate
½ cup strawberry flavored syrup
Melt chocolate over a double boiler, add strawberry syrup to cream and whip to soft peaks, (set aside 1 cup of whipped cream for garnish) gently fold melted chocolate into whipped cream and evenly distribute between cake pans, refrigerate for half hour
Chocolate sauce:
1 cup corn syrup
2 cups dark chocolate
2 cups heavy cream
Melt ingredients together over a double boiler whisking until smooth
Assembling the final product:
1 bunch fresh mint
1 basket fresh strawberries
Chocolate "bark" (melted chocolate, spread flat, hardened and broken into pieces)
Unmold cakes, top with chocolate sauce, (dripping down the sides), strawberry whipped cream and a chocolate dipped strawberry. Garnish with fresh mint leaves, sliced strawberries and chocolate "bark" and sauce
