For the Cheese Filling:
6oz Diced Brie4oz Stilton Blue Cheese1 Cup Toasted Chopped Walnuts
Combine all ingredients and mix well in KitchenAid type mixer. Divide into half ounce balls and freeze.
For the Dough:
4 Cups chopped French bread (Crust Removed)2 Large Eggs½ Teaspoon Black Pepper2 Cups Whole MilkPanko Bread Crumbs (as needed) at least 6 cups might be neededVegetable Oil For Frying
Combine bread crumbs, pepper, eggs and milk and set aside for a few minutes to allow bread to soften. Add approximately 1 cup of Panko and mix well. Let stand fro a few minutes to allow Panko to soak up liquid. Repeat this until a slightly firm yet tacky dough forms. Oil your hands with olive oil so dough doesn't stick to much. Form a circle the size of a silver dollar and about ¼ inch thick. Place a frozen cheese ball in the middle and form dough around the cheese ball. Immediately roll in remaining Panko to give a crispy coating when fried. Fry Beignets at 375 degrees until golden brown. And Serve with apple slices, toasted walnuts and red grapes for garnish.
For a great dipping sauce take a 750ml bottle of Port and reduce in down to about 3/4 cup or dill slightly thick and syrupy.
