French Toast from the $5 Chef
This colorful presentation of a simple French toast uses sourdough French bread and is topped with some luscious strawberries or raspberries. If you can't find either fresh, use frozen (look for no sugar added frozen fruit) and cook the fruit down to make a warm sauce. You can leave the fruit as is, warmed and cooked, or add a splash of orange flavored liquor or even just the zest and juice of a fresh orange.
3 large eggs
1-1/4 cups orange juice, low fat milk, or apple juice
1 or 2 tablespoons sugar, or to taste, optional and not necessary if using fruit juice above
½ teaspoon vanilla extract
¼ teaspoon cinnamon, or to taste
Dash of salt
Butter, as desired, for cooking
8 slices thick French sourdough bread
1. In a bowl large enough to hold bread, mix with a fork all the ingredients except butter and bread.
2. Heat a large nonstick skillet with butter. Dip bread one slice at a time into the egg mixture. Let excess drain off before putting bread in skillet.
3. Cook on medium-low heat and turn slices as they brown. Serve with strawberry or raspberry sauce. See recipe below.
Fruit Sauce
12 ounces frozen fruit or about 1-1/2 to 2 cups fruit of choice, strawberries, raspberries, blueberries
Zest and juice of one orange, or splash of orange liquor, optional but good
Dash of sugar if desired, or to taste
Put all ingredients in a saucepan and gently cook on low head until fruit is soft. You can mash if desired, or just leave whole or slightly softened.
Top the French toast with sauce.
