Fire Roasted Salsa

Fire Roasted Salsa

(Prepared on grilled flank steak)
Ingredients-
4 medium tomatos, remove core
1 red pepper
1 poblano pepper
4 green onions, trim off root ends
1 onion, peeled and cut into quarters
2 cloves garlic, peeled (wrap in foil to prevent loss)
2 jalapenos
2 Tbs. olive oil
Juice of one lime
One-quarter cup finely chopped cilantro
Sea salt and pepper to taste

Instructions-
1. Coat the vegetables with olive oil and either grill (or broil in a very hot oven) until all vegetables are charred (thinner and smaller vegetables will char faster so watch them)
2. Remove stems from peppers
3. Puree the vegetables in a food processor to desired consistency
4. Pour into a bowl; add lime juice, cilantro and season to taste with sea salt and pepper

Prepare salsa for use in your meal to give it an extra kick of flavor!
This recipe pairs great with a grilled flank steak.
