Drunken Linguini
Serves 4
- 1 lb linguini. Cooked al dente, drained, and set aside tossed in olive oil to prevent sticking.
- 2 lbs of fresh clams. Scrub clean making sure none are open.
- 1 large tomato
- 4 cloves garlic
- 1 small shallot
- 8 ounces sliced mushrooms
- 3 sprigs Italian parsley chopped.
- 2 Tbl butter
- ½ to ¾ cup of Vodka
- olive oil
- salt and pepper to taste
Sautee chopped shallots and garlic until sweating then add the mushrooms and clams. Turn up heat and sautee until clams begin to open. Add the vodka and allow to reduce. Lastly add the parsley, shallots, and butter. Allow flavors to combine than season with salt and pepper as necessary. Have Linguini set aside in large bowl, pour clams and sauce over the pasta and give it a quick toss. Enjoy
