Tres Agaves Green Chorizo
2 lb. ground pork
1 bunch of Cilantro
2 cloves of garlic, peeled
1 bay leaf
2 sprigs of fresh thyme
.25 cup apple cider vinegar
2 tbsp kosher salt
Hank casing
In a blender blend all the ingredients except the meal and casing.
Pour mixture over the meat, mix and stuff inside casing using a sausage stuffer.
Cook chorizo as desired once prepared in casing.
