Chocolate Turtle Cups

Chocolate Turtle Cups

yield: 4 - 8oz. portions

Ingredients:

1-1/4 c. dark chocolate chips

1/4 c. heavy cream

1/2 c. unsalted butter (1 stick)

3 eggs

3/4 c. sugar

1/4 c. bread flour

3 Tbl. cocoa powder

1/2 c. chopped pecans

Chocolate Ganache Filling: (Make 1 day ahead)

1. Mix 1/2 c. of chocolate (approximately 1/4 bag) and heavy cream together in a metal bowl. Place bowl over a pot of simmering water and melt together, stirring occasionally until melted and smooth.

2. Cool, cover and store under refrigeration overnight.

Mixing Method:

1. Preheat oven to 350F.

2. Mix remaining chocolate (3/4 c.) and butter together in a large metal bowl, place bowl over a pot of simmering water and melt the two, stirring occasionally to maintain a smooth consistency. Remove bowl once melted and set aside to cool a bit.

3. In a separate bowl, sift together flour and cocoa powder and set aside.

4. Using a whip attachment in a standing mixer whip together eggs and sugar until light and full, approximately 5 minutes.

5. Fold egg mixture into chocolate mixture. It should look streaked, not fully mixed.

6. Sprinkle flour mixture atop batter and fold in being careful not to over mix.

Assembly:

1. Pour batter into 8oz.  oven-safe ceramic ramekins or bowls, filling only part full.

2. Sprinkle chopped pecans atop batter and scoop 1 tsp. of ganache in center.

3. Pour on remaining batter being careful to leave room at top for the cake to grow (usually about 1/2" of space should be sufficient.)

4. Place on foil-lined cookie sheet and bake for about 35-45mins. Remember to rotate pan halfway through to ensure even baking and prevent scorched tops. (Note: Cake testers won't come out clean because of the gooey ganache center, but you can pry up the lid of the cake and peek underneath to check for doneness.)

Serve warm. Top with a scoop of vanilla ice cream, a drizzle of caramel sauce, and another tablespoon of the chopped pecans.
