Chocolate Ganache
one half pint of cream
8 oz. sugar
1.5 lbs. dark chocolate (68% cocoa)
Combine cream and sugar and bring to boil. Shut off and stir in one and half pounds of chocolate (dark 68% cocoa) until mixed. This makes a great coating and dipping chocolate.
