Chilaquiles Rancheros
Chilaquiles (CHILI-KILLES) Rancheros
Ingredients-
2 eggs scrambled
1 corn tortilla
1 link of chorizo sausage
One-quarter cup cooked rice
4 cups of cooked black beans
1 oz. bacon
1 white onion
4 cloves of garlic
One-half bunch fresh oregano
Pinch of dried thyme,
1 roasted pepper diced
1 teaspoon dried cumin
2 minced jalapeños
1 cup vegetable stock
1 lb. tomatillos
2 shallots
1 bunch cilantro
Shredded cheese (your choice)
1 teaspoon sour cream
One-half avocado
Instructions-
Rice: Cook rice according to package directions
Black Beans:
Brown bacon, add onion, garlic, cilantro, oregano, thyme, peppers, cumin and jalapeños
Sauté all ingredients
Add beans, chicken stock, cilantro and simmer
Tomatillo Salsa:
Boil Tomatillos for ten minutes
Sauté, shallots, garlic, cumin, cilantro, onions, jalapeño
Combine all ingredients in food processor and pulse
To Prepare All:
On a corn tortilla, layer: rice, beans, Tomatillo salsa, 2 eggs scrambled, sour cream, avocado,
cheese and top with chorizo
Makes 1 serving. Enjoy!
