Mesquite-Fired Grilled Chicken Fajitas
MESQUITE-FIRED
GRILLED CHICKEN FAJITAS

INGREDIENTS:
2-3 Lbs Boneless Skinless Chicken Thighs
2 tbs Lawrys or Mitches Oh Yea!
3 tbs Olive Oil
1 Portion Woodbridge Grill Mesquite
SALSA INGREDIENTS:
6 Roma Tomatoes diced
1 White Onion diced and chopped
5 Cloves of Garlic diced and chopped
1 Mediums sized Jalapeño Pepper chopped
½ Bunch of Cilantro diced and chopped
3 Green Onions diced and chopped
3 Tsp Tapatio (or to taste)
3 Tsp Olive Oil
Blend all ingredients together (Best if refrigerated overnight)
MEAT PREPARATION:
Cover chicken thighs in olive oil and coat evenly with seasoning.
GRILL PREPARATION:
Place Woodbridge Grill Smoker Box 2/3 full with Mesquite under grill suspended magnetically above heat source/flame. Fire up grill using medium heat (350f-450f).
GRILLING:
Once smoke develops robustly, place chicken on grill (indirect heat recommended) and close lid. Grill for approximately 10 minutes on first side and 5 on other. Remove at 150f and slice in to bite size portions, cover with foil. Grill tortillas to desired crispiness, remove and fill with chicken and salsa. Squirt and extra shot of lime for a little more zing!
