Champagne Swiss Cheese Fondue

In honor of National Cheese Fondue Day, The Melting Pot restuarant is sharing some of it s delicious fondue recipes.

Ingredients:

¼ heaping tsp. of minced garlic
Juice from 1/4 of a lemon
4 oz. of champagne
6 oz. of shredded Emmenthaler/Gruyere cheese (50/50 blend), dusted lightly with flour
½ tsp. of fresh ground pepper
Sprinkle of nutmeg

Preparation:

  1. Pour champagne into double boiler or fondue pot and turn on heat.
  2. As champagne is warming, add minced garlic and squeeze of lemon. Blend.
  3. Add small quantities of cheese blend and mix thoroughly using a whipping motion until cheese is melted.
  4. Continue to add small quantities of cheese to bring to proper consistency.
  5. Add ½ tsp. of pepper. Sprinkle with nutmeg.
  6. Gently fold nutmeg and pepper into cheese.
  7. Serve with bread cubes and assorted vegetables for dipping.


Serves 1-2 persons
