Ceviche Presented In Avocado
CEVICHE PRESENTED IN AN AVOCADO
1/2 pound u21-25 shrimp
1/2 pound bay scallops-rinsed and cleaned
10 limes juiced
2 oranges juiced
1Tbs lemon zest
1Tbs lime zest
1/4c red onion, fine diced
1/4c tomatillo, fine diced
1/4c red bell, fine diced
1/4c pasilla pepper, fine diced
1/4c mango, fine diced
1/4c cilantro, chopped
8-10 avocados
> 1.Blanche shrimp in salted boiling water for 1 min and immediately
> cool in a ice water bath 2.Quarter shrimp and combine with all
> ingredients, minus the avocadoes, season with salt and pepper to taste
> 3.Place bowl in refrigerator for approximately 2 hours 4.After 2 hours
> half all avocadoes and lightly season with lime juice, salt and pepper
> 5.Serve ceviche in cored avocados
