Evan's Mashed Cauliflower
Ingredients:
2 heads cauliflower washed and de-stemmed
½ cup regular (salted) butter
½ cup sour cream
½ cup Ricotta cheese
½ cup shredded Asiago cheese (Parmesan OK also)
½ cup roasted garlic
1 tsp salt
1 tsp black pepper
De-stem and clean cauliflower. Cut into 1 inch cubes and boil until soft. Drain well.
Mix all ingredients except cauliflower together in a sauce pan and heat until they start to boil. Turn off heat.
Mix all ingredients in a food processor until smooth, or hand mash.
Makes 12 servings
