Carnitas Breakfast Burrito with Salsa Verde

Carnitas Breakfast Burritos.

Ingredients:
12oz Carnitas (or meat of choice)
8ea Eggs, whisked and seasoned
5# Tomatillos
10cl Garlic, blackened
1ea White Onion, chopped
3-6ea Jalapenos (to your spice liking)
1bu Cilantro
1-2T Sugar
4ea Flour Tortillas (burrito size)
8oz Mozzarella cheese
1c Sour Cream
1ea Lime
Radishes for garnish
Method:
1. Rinse tomatillos and remove papery skin. Put tomatillos and jalapenos on a sheet pan and place under a broiler until tops are blackened and tomatillos are soft.
2. Place unpeeled garlic cloves and blacken in a small sauté pan or cast iron skillet.
3. Combine tomatillos, jalapenos, garlic, onion and cilantro in a blender and puree until desired consistency. Season with salt and sugar.
4. Crisp carnitas in a nonstick pan, add eggs and scramble to desired doneness.
5. Warm 4 large flour tortillas and place on a flat surface, add 1 portion of egg mixture to each tortilla and roll into a burrito.
6. Place burritos in an oven safe dish and cover with copious amounts of verde and mozzarella cheese. Bake in the oven until the cheese is melted.
7. Finish with lime crema and radishes.
