Ettore Ravazzolo from Ettore's is sharing his recipe for Cannoli...a pastry dessert stuffed with creamy filling and sweets.

INGREDIENTS:

2oz candied fruit, finely chopped, soaked with rum
2oz chopped, semi-sweet chocolate chips
8oz ricotta cheese
2 egg whites
2oz sugar
4oz whipped cream

DIRECTIONS:

  1. Add candied fruit and chocolate chips to ricotta cheese.
  2. In a separate bowl combine egg whites and sugar to make a meringue.
  3. Fold whipped cream into candied fruit and chocolate chips.
  4. Fold the meringue into candied fruit, chocolate chips and whipped cream.
  5. Stuff filling into cannoli shells.

The shells can be purchased from any store or stop by Ettore's.

They can be finished by dipping the end in melted chocolate and chocolate shavings at one end and a maraschino cherry on the other end.
