Bison Burger
Bison Burger
(Makes 4 burgers)
1 lb ground bison (15% fat)
2 Tablespoon pure olive oil
1 Tablespoon shallots, minced
1 Tablespoon yellow onion, minced
2 teaspoons garlic, roasted
2 teaspoons Dijon mustard
½ teaspoon paprika
½ cayenne pepper
1 teaspoon sea salt
½ teaspoon fresh ground pepper
Whole wheat buns, sliced
4 ounces Maytag blue cheese, crumbled
Butterleaf lettuce
1 Roma tomato, sliced thin
Dill pickle spears
Ketchup
In a skillet over medium high heat add half the olive oil. When hot add shallot and onion, sauté until translucent. Remove and chill. To bison meat, add chilled shallots, onions, roasted garlic, paprika, salt, pepper, mustard and cayenne pepper. Combine and form patties.
In a skillet over medium heat add the second tablespoon of olive oil. When hot; add bison burgers and cook to medium rare turning once, about 8-10 minutes. About one minute before finished, top with blue cheese to begin to melt.
Place on toasted bun, with lettuce and tomato. Place the toasted bun top onto the burger. Garnish with a pickle.
