Beef Stifatho
BEEF STIFATHO 2009 Greek Festival
5 Servings
½ Cup Olive Oil
2 lbs. Lean Beef (2" cubes)
2 ts. Salt
¼ ts. Pepper
4 ts. Crushed Garlic
1 Cinnamon Stick
3 Bay Leaves
1 Tbs. Pickling Spice
1 Cup Tomato Sauce
1/3 Cup Red Wine Vinegar
1 Tbs. Brown Sugar
2 lbs. small whole boiling onions
2/3 lb. Chopped Onions (1 inch)
Heat oil in a heavy saucepan. Add meat and brown on all sides; add chopped onions and garlic. Season with salt and pepper. Make a pouch of cheesecloth and put in the cinnamon stick, bay leaves and peppercorns; add to pot. Pour in the tomato sauce, vinegar and brown sugar. Cover and simmer for 1 hour.
Peel the onions and make a small cut in the root end of each to prevent bursting. Add the onions and simmer an additional 30 minutes or until the onions and meat are tender and the sauce is thick.
